Ingredients
  

Brownie Batter

  • 1 can can chickpeas (15 oz) drained and rinsed (or 1 ½ cups cooked chickpeas)
  • ½ cup pure pumpkin purée
  • ¼ cup unsweetened cocoa powder
  • ½ cup gluten free oat flour
  • ½ teaspoon baking powder
  • ½ teaspoon pure vanilla extract
  • ½ cup pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

Topping

  • ½ – ¾ cup dairy-free chocolate chips

Preparation

  • Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper, leaving overhang, then set aside.

Making the Batter

  • Combine all ingredients except chocolate chips in a food processor and blend until smooth, scraping the sides as needed.

Baking

  • Pour the batter into the prepared baking dish and smooth the top.
  • Bake for 22-25 minutes until the top is set.

Finishing Touches

  • Sprinkle chocolate chips over the baked bars and return to the oven for 2-3 minutes until softened.
  • Use an offset spatula to spread the softened chocolate chips into an even layer.

Cooling and Serving

  • Allow the brownies to cool completely in the pan for at least 30-60 minutes before using the parchment paper to lift them out and cut into squares.
