  • 12 Hard-boiled eggs peeled, halved, whites and yolks separated
  • ½ cup Mayonnaise
  • 2 teaspoons Dijon mustard
  • ½ teaspoon Kosher salt
  • Purple food coloring for eyeball deviled eggs
  • Pimento-stuffed green olives sliced, for eyeball deviled eggs
  • Orange food coloring for pumpkin deviled eggs
  • Curly parsley for pumpkin deviled eggs
  • Green food coloring for spooky green deviled eggs
  • Black sesame seeds for spooky green deviled eggs
  • Pitted whole black olives for spider deviled eggs

Preparation

  • In a small bowl, crush egg yolks with a fork until smooth, then stir in mayonnaise, Dijon mustard, and salt until well combined.
  • Divide the prepared yolk mixture into separate bowls based on how many deviled egg varieties you plan to make, setting aside corresponding egg whites for each.
  • For Eyeball Deviled Eggs, mix purple food coloring into a portion of the yolk mixture, fill egg whites, and top with a slice of pimento-stuffed green olive.
  • For Pumpkin Deviled Eggs, stir orange food coloring into another yolk portion, fill egg whites, create pumpkin creases with a toothpick, and garnish with parsley.
  • For Spooky Green Deviled Eggs, combine green food coloring with a third yolk portion, fill egg whites, and sprinkle with black sesame seeds.
  • For Spider Deviled Eggs, fill egg whites with plain yolk mixture, then cut black olives to form spider bodies and thinly sliced legs, arranging them on top.
