Ingredients
  

For cupcakes:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 cup unsalted butter melted and cooled
  • 1/2 cup granulated Sugar
  • 1 teaspoon pure vanilla extract

For Frosting and Decorating:

  • 1 cup unsalted butter (2 sticks), softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • Gel Food colors of your choice (red, orange, and green)
  • 7-8 Oreos (large and small)
  • 30-35 pieces Candy eyes

Instructions
 

For cupcakes:

  • Preheat the oven to 350 degrees F and line your baking tray with cupcake liners.
  • In a large bowl, combine the flour, baking powder, baking soda, and salt, mixing well.
  • In a separate bowl, beat together the buttermilk, egg, melted butter, sugar, and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture in batches, mixing until just combined without overmixing.
  • Using an ice cream scoop, fill each cupcake liner about three-quarters full with batter.
  • Bake for 18-20 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the baking tray for 5 minutes before transferring them to a wire rack to cool completely.

For Frosting and Assembling:

  • In a stand mixer or with a hand mixer, cream the softened butter until light and creamy, then add vanilla extract and powdered sugar in batches, beating for 5-6 minutes until smooth and fluffy.
  • Divide the frosting into four equal parts, tinting three with green, orange, and red food color, and leaving one part white.
  • Gently separate Oreos in half and scrape off the icing to get two cookies per Oreo; cut larger cookie halves in half, keeping smaller ones intact.
  • Fit piping bags with grass icing tips and fill with colored frosting, then pipe the "fur" onto the cupcakes, starting at the edges and working inward.
  • Carefully place 1, 2, 3, or more candy eyes onto each cupcake using tweezers.
  • Use the Oreo halves to create monster mouths, placing them gently on the frosting, then pipe small dollops of white frosting around the edges to form teeth.
