  • 2 lbs boneless skinless chicken breasts cut into small pieces
  • 3 tablespoons spicy seasoning mix
  • 3 tablespoons olive oil for tossing chicken and vegetables
  • 3 sweet potatoes peeled and diced
  • 5 cups broccoli florets broccolini can be used instead
  • coarse sea salt
  • freshly cracked pepper

For Serving

  • avocado
  • hummus
  • lemon juice
  • chives
  • olive oil

Instructions
 

Preparation

  • Preheat oven to 425°F. Toss chicken with spices and olive oil, then refrigerate for 30 minutes while preparing other ingredients.

Cooking

  • Arrange vegetables on one sheet pan, drizzle with olive oil, and season with salt. Place chicken on a separate sheet pan.
  • Bake all ingredients for 12-15 minutes. Remove the broccoli and chicken, then stir sweet potatoes and continue roasting for another 15 minutes.

Serving

  • Divide the cooked meal into containers for easy meal prep throughout the week.

Notes

For extra flavor, a squeeze of fresh lemon juice or a dollop of hummus can be added when serving. This recipe is perfect for busy weeknights or healthy meal prep.
