  • lbs carrots about 8 large carrots
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp pure honey
  • 1 tsp water
  • 1 clove garlic minced
  • 2 tbsp fresh dill
  • ½ cup feta cheese
  • Salt & pepper to taste

  • Preheat oven to 425°F (220°C). Prepare carrots by washing, peeling, and cutting them in half lengthwise if they are large.
  • Line a baking sheet with parchment paper and spread the prepared carrots evenly across it.
  • In a small bowl, whisk together the olive oil, honey, water, minced garlic, salt, and pepper. Pour this mixture over the carrots on the baking sheet.
  • Roast for 20-25 minutes, making sure to stir the carrots halfway through the baking time for even cooking.
  • Remove the roasted carrots from the oven and immediately top them with crumbled feta cheese and fresh dill before serving.

Notes

For extra flavor, consider adding a squeeze of lemon juice before serving. The sweetness of the honey beautifully complements the savory feta.
