Preparation

  • In a medium bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract until fully combined. Adjust the sweetness to your preference.
  • Line a baking sheet with parchment paper to prevent sticking.
  • Pour the yogurt mixture onto the tray, spreading it into an even layer about 1/4 inch thick.
  • Evenly sprinkle the berries across the yogurt base, pressing larger pieces gently into the yogurt. Add any optional toppings.
  • Place the tray in the freezer and freeze for at least 3 hours or until completely solid, preferably overnight.
  • Once frozen, lift the parchment paper from the tray and break the yogurt sheet into rustic, bark-like pieces.
  • Serve immediately or store in a freezer-safe container for up to 2 weeks.

Notes

For a creamier texture, use full-fat Greek yogurt. Ensure any frozen berries are thawed and dried to avoid icy bark. Can customize with different toppings.
