Ingredients
  

Salad

  • 2 cups cooked chicken
  • 4 cups romaine
  • 2 cups strawberries
  • 1/2 cup dried cranberries
  • 1/4 cup red onion sliced
  • 1/4 cup goat cheese crumbled
  • 1/4 cup almonds sliced

Strawberry Balsamic Dressing

  • 1 cup strawberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

Prepare Dressing

  • Blend strawberries, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper until smooth. Adjust seasoning.

Assemble Salad

  • Chop romaine and place in a large salad bowl.
  • Add chicken, strawberries, cranberries, and onion over romaine.
  • Top with goat cheese and almonds.
  • Dress and toss salad with half of the dressing. Serve immediately.

Notes

Toasting almonds enhances the flavor. Use fresh strawberries for best results.
