  • 2 cups pomegranate arils from about 2 pomegranates
  • 1 cup cucumber finely chopped
  • 1/4 cup red onion finely chopped
  • 1 small jalapeño seeded and minced
  • 1 cup fresh cilantro and mint leaves loosely packed, minced
  • 1/2 a lime lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon raw honey
  • salt and pepper

Instructions
 

Prepare the Salsa

  • In a large bowl, combine the pomegranate arils, chopped cucumber, red onion, minced jalapeño, cilantro, and mint.
  • In a separate small bowl, whisk together the lime juice, olive oil, and raw honey to create the dressing.
  • Pour the prepared honey-lime dressing over the salsa mixture and gently toss until all ingredients are evenly coated.
  • Season the salsa with salt and pepper according to your taste preferences, then serve immediately or chill for later.

For best flavor, let the salsa sit for at least 15 minutes before serving to allow the flavors to meld.
