  • 1 pound spicy Italian ground sausage use mild for kid-friendly
  • 4 tablespoons butter
  • 0.5 white onion diced
  • 1 tablespoon minced garlic
  • 6 cups chicken broth
  • 2 cups water
  • 4-5 yellow potatoes cut into 1-inch pieces
  • 3 teaspoons salt or to taste
  • 1 teaspoon black pepper
  • 2 cups heavy cream
  • 4 cups chopped kale
  • chopped bacon or bacon bits for topping, optional
  • grated parmesan cheese for topping, optional

Steps

  • In a large pot, brown the spicy Italian sausage for 5-6 minutes; then, use a slotted spoon to transfer it to a plate and set it aside.
  • In the same pot, melt butter and sauté diced onions over medium heat until translucent, then add minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and water, add potatoes, salt, and pepper, then bring to a boil and cook until the potatoes are tender. Finally, stir in the kale, heavy cream, and cooked sausage; taste and adjust seasoning before serving with optional parmesan cheese and bacon.

Notes

For a milder soup, use mild Italian sausage instead of spicy. Serve hot with crusty bread for dipping and an extra sprinkle of Parmesan cheese.
