  • 1 pound ground beef
  • ½ onion diced
  • 1 red bell pepper diced
  • 1 can petite diced tomatoes (14.5 oz can)
  • 1 can crushed tomatoes (28 oz can)
  • 1 teaspoon minced garlic
  • 1 tablespoon Italian Seasoning
  • 4 cups beef broth (1 carton)
  • 12 oz lasagna noodles
  • ½ cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1 cup parmesan cheese shredded

Cooking Instructions

  • Brown the ground beef in a large skillet, drain excess grease, and then transfer it to a 6-quart crock pot.
  • Add the diced onion, red bell pepper, crushed tomatoes, diced tomatoes, seasonings, and beef broth into the crock pot.
  • Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours.
  • After initial cooking, remove the lid, break lasagna noodles into bite-sized pieces, and stir them into the soup.
  • Cover again and cook on high for an additional 30-45 minutes until the lasagna noodles are fully cooked through.
  • Spoon the soup into bowls, then top each serving with a tablespoon of ricotta cheese, a handful of mozzarella, and shredded parmesan cheese.

Notes

For best results, taste and adjust seasonings before the final cooking step. You can also experiment with different vegetables like zucchini or spinach for added flavor and nutrition.
