  • 2 tablespoons Olive Oil divided
  • 8 ounces Shiitake Mushrooms thinly sliced
  • 2 tablespoons Fresh Ginger grated or minced
  • 4 cloves Garlic pressed or minced
  • 6 cups Vegetable Broth
  • 2 tablespoons Soy Sauce
  • 16 to 20 ounces Frozen Potstickers
  • 5 Scallions thinly sliced and divided
  • 3 Baby Bok Choy ends trimmed off and leaves separated
  • 2 teaspoons Toasted Sesame Oil
  • Freshly-ground Black Pepper to taste

Preparation

  • Heat 1 tablespoon of oil in a large stockpot, sauté mushrooms until browned. Add remaining oil, garlic, and ginger, then sauté until fragrant.
  • Pour in vegetable broth and soy sauce, bringing the mixture to a boil. Add potstickers, half of the scallions, and bok choy, cooking for 3-4 minutes until potstickers are done. Stir in sesame oil and black pepper, then adjust seasoning as needed.
  • Serve the soup hot, garnished with the remaining scallions and any desired optional toppings.

Notes

This recipe is easily customizable with your favorite toppings like chili crisp or toasted sesame seeds. Adjust soy sauce and black pepper to taste for optimal flavor.
