  • 2 medium zucchini sliced into 1/4 to 1/2-inch rounds
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 cup freshly grated parmesan pre-shredded is also fine

Preparation

  • Preheat oven to 450°F and line a broil-safe baking sheet, optionally with foil, for easier cleanup.
  • Arrange zucchini slices on the baking sheet, drizzle with olive oil, toss to coat, and spread into a single layer.
  • Sprinkle the zucchini generously with salt and pepper, then top each slice with parmesan cheese.

Baking & Broiling

  • Bake on the center rack for approximately 10 minutes, until the zucchini is fork-tender.
  • Switch to high broiler and cook for 2 to 3 minutes, until the parmesan cheese is bubbly and nicely browned.
  • Serve immediately and enjoy your baked parmesan zucchini!

Notes

For best results, ensure zucchini slices are in a single layer for even cooking and browning. Keep a close eye on the zucchini under the broiler to prevent burning.
