  • 2 tablespoons minced garlic about 6 to 7 cloves
  • 2 tablespoons fresh parsley or other herbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  • Preheat oven to 400°F. Halve or quarter potatoes, then combine them in a bowl with olive oil, minced garlic, parsley, salt, and pepper.
  • Toss all ingredients together until the potatoes are evenly coated.
  • Spread potatoes in a single layer on a sheet pan, cut side down for crispiness. Roast for 45-55 minutes, stirring once, until golden brown.
  • Transfer roasted potatoes to a serving bowl and garnish with extra parsley if desired before serving.

Notes

For extra crispy potatoes, ensure they are cut side down on the baking sheet. Stirring halfway through roasting helps ensure even browning and crispiness.
