Crispy Garlic Herb Chicken Thigh Recipe

  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation

  • Pat the chicken thighs very dry with paper towels, then season generously with salt and black pepper on both sides.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium heat. Add minced garlic, chopped rosemary, and thyme, cooking for about 30 seconds until fragrant.
  • Place the chicken thighs skin-side down in the skillet. Sear for 8-10 minutes, or until the skin is golden brown and crispy.
  • Flip the chicken thighs, then transfer the skillet to a preheated oven at 400°F (200°C). Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Serving

  • Remove the skillet from the oven and let the chicken rest in the skillet for 5 minutes before serving.

Notes

For extra crispy skin, ensure chicken thighs are patted very dry before seasoning and searing. A cast iron skillet works best for achieving a great sear.
