  • 4 medium boneless, skinless chicken breasts
  • 1 tablespoon oil of choice
  • 1/4 cup onion finely chopped
  • 2 cloves garlic crushed or minced
  • 1 cup chicken broth (water can also be used)
  • 1 juice of lime
  • 2 tablespoons cilantro chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup heavy cream or half and half (or sour cream or Greek yogurt)

Cooking Steps

  • Pat chicken breasts dry, season with salt and pepper.
  • Heat oil in a skillet over medium-high heat, sear chicken 5-6 minutes per side. Set aside.
  • Reduce heat, sauté onions 2-3 minutes, then add garlic for 30 seconds.
  • Pour in chicken broth, add red pepper flakes, simmer 2-3 minutes.
  • Stir in cream and lime juice, adjust seasoning.
  • Return chicken to skillet, cover, simmer 7-10 minutes.
  • Garnish with cilantro and serve immediately.

Notes

Avoid curdling the sauce by lowering the heat before adding cream. Thicken sauce by simmering, or loosen with broth.
