Ingredients
  

For the Quesadillas

  • 1 pound Ground beef Browned with salt and pepper then drained.
  • 1 tablespoon Ketchup For seasoning the beef.
  • 1 tablespoon Mustard For seasoning the beef.
  • 4 large Tortillas Mission gluten free tortillas recommended.
  • 2 cups Shredded cheddar cheese For filling.
  • 1/2 cup Chopped onions For toppings.
  • 1/2 cup Chopped pickles For toppings.
  • 4 slices Turkey bacon Crispy, for toppings.

For the Special Sauce

  • 1/2 cup Mayonnaise Creamy base for the sauce.
  • 2 tablespoons Ketchup For sweetness and color.
  • 2 tablespoons Minced dill pickles For crunch and flavor.
  • 1 tablespoon Minced white onion For savory bite.
  • 2 teaspoons White vinegar To keep the sauce from tasting heavy.

Instructions
 

Make the Sauce

  • In a small bowl, stir together mayonnaise, ketchup, minced pickles, minced onion, and vinegar. Chill while you cook.

Prepare the Beef

  • Heat a large nonstick skillet over medium-high heat. Cook ground beef with salt and pepper until browned, about 5 to 7 minutes. Drain excess fat.
  • Off heat, stir 1 to 2 teaspoons ketchup and mustard into the beef for flavor.

Assemble Quesadillas

  • Spread a thin layer of special sauce on half of each tortilla.
  • Top with a handful of cheddar, a scoop of beef, more cheddar, onions, pickles, and turkey bacon.
  • Fold tortillas over to create half moons.

Cook Quesadillas

  • Place tortillas in the hot skillet and cook 2 to 3 minutes per side until cheese is melted and both sides are golden.
  • Press gently with a spatula for even browning.

Serve

  • Rest for 1 minute, then cut into wedges. Serve with extra special sauce for dipping.

Notes

Cook beef until no pink remains but be cautious not to dry it out; a little moisture keeps the filling juicy. Drain the beef well to prevent soggy tortillas.
