Ingredients
  

Salad

  • 4 cups cubed watermelon
  • 2-3 peaches cut into thin wedges
  • fresh basil leaves
  • 8 oz fresh feta cheese crumbled
  • 1/4 cup roasted pistachios chopped
  • 2 tbsp fresh chives chopped
  • salt and black pepper
  • chili flakes

Dressing

  • 1/4 cup extra virgin olive oil
  • 3 tbsp champagne vinegar
  • 3 tbsp honey
  • 1 tbsp fig preserves optional

Dressing

  • Make the dressing. In a small bowl, whisk olive oil, vinegar, honey, and fig preserves until smooth. Season with salt and pepper.

Salad

  • Prep produce. Cube watermelon and slice peaches, placing them in a salad bowl.
  • Assemble base. Add peaches to watermelon and scatter basil leaves.
  • Add toppings. Sprinkle feta, pistachios, and chives over the salad.
  • Dress and season. Drizzle vinaigrette over salad, add salt, pepper, and chili flakes to taste.
  • Serve immediately. Toss gently right before serving.

Notes

Can't find champagne vinegar? White wine vinegar or rice vinegar work beautifully in its place. If peaches aren't at peak ripeness, nectarines are a fantastic swap. For a dairy-free version, use a plant-based feta or simply skip it and add a few extra pistachios.
